The way that from 1.9 or so you could put stuff in containers without mods

oh, yes, some parts can be stored in those containers. The containers have a volume and iirc weight limit.

And I think there is no documentation for them.

To store things in them place a container, then select it with a right click, now the storage comes up.

It only works on EVA with a Kerbal. You go/fly close to the part you want to work on, then enable the "attachment/engineering mode" and then you can either chose from parts inside the Kerbals cargo space or if a cargo container is close enough then you can select a part from there

conviniently all the parts will be shown on the left side of the screen

to exit the "attachment/engineering mode" just close this dialog on the left side

some parts may be too heavy to move with one Kerbal, you can bring more. But I never tested this.

Any crewed part has a small bit of storage per seat

Right - KIS has dedicated storage parts too, but eases the pain a bit by the way any kerbal can bring a small bit of gear

you can swap around parts in storage containers in-flight. For example: Place some working lamps in a storage container, then move them to the Kerbals inventory and now you can place them on the surface anywhere the Kerbal goes
